Ingredients - Caesar Sauce

  • 2 egg yolks
  • 2 hard-boiled eggs
  • 3 anchovy fillets
  • 2 garlic cloves
  • Parmesan cheese
  • 1 yellow lemon
  • 2 tablespoons of white balsamic vinegar
  • 1 tablespoon of Worcestershire sauce
  • 30 cl of vegetable oil

Ingredients - Salad

  • 1/2 traditional baguette
  • 3 cloves of garlic
  • Olive oil
  • 1 romaine lettuce
  • 2 chicken breasts
  • Breadcrumbs
  • Fresh chopped rosemary
  • Zest of one lemon
  • Eggs
  • Flour

Recipe - Caesar Sauce

  • In a blender, add 2 egg yolks, 2 hard-boiled eggs, 3 anchovy fillets, Worcestershire sauce, vinegar, garlic, and the yellow lemon.
  • Blend until the sauce is smooth.
  • Add a generous amount of Parmesan cheese. (The more, the better!)
  • Blend again.
  • Reduce the speed to a minimum and start slowly incorporating the oil. Go slowly to allow the sauce to emulsify smoothly without splitting.
  • Set the sauce aside in the refrigerator.

Recipe - Salad

  • Season the chicken with salt and pepper.
  • Refrigerate to allow excess moisture to come out.
  • Cut the baguette in half and tear it into small pieces.
  • Finely grate 3 cloves of garlic over the bread pieces.
  • Add chopped rosemary.
  • Season with salt and pepper.
  • Drizzle generously with olive oil.
  • Mix well.
  • Bake for 15 minutes at 200°C (392°F).
  • Set aside.
  • Prepare the breadcrumbs by adding lemon zest, rosemary, salt, and pepper.
  • Pat the chicken breasts dry with paper towels.
  • Bread the chicken breasts, starting with flour, then egg, and finally breadcrumbs.
  • Fry in oil at 180°C (356°F) for 10 minutes.
  • Cut the lettuce, removing the central part.
  • In a salad bowl, add the lettuce, croutons, and a good amount of sauce.
  • Mix and plate.
  • Add a chicken breast and shavings of Parmesan cheese.
  • Drizzle a bit more sauce over the chicken.
  • Enjoy your meal!
