  • Olive oil
  • 1 kg pork shoulder
  • 2 white onions, cut into 4 pieces
  • 3 jalapeños, cut in half
  • 4 cloves of fresh garlic
  • Juice of 2 oranges
  • Juice of 3 limes
  • Water (if needed)
  • Cheddar cheese

For pickled red onions:

  • 1 red onion, sliced
  • 250 ml apple cider vinegar
  • 125 ml red wine vinegar
  • 50 g sugar
  • Pepper
  • 1 dried chili

For tacos:

  • Tortillas
  • Fresh cilantro
  • Finely sliced shallots
  • Lime juice

Carnitas (Mexican Shredded Pork):

  1. Prepare the spice mix by combining cumin, oregano, dried garlic, dried onion, dried chili, salt, and pepper.
  2. Drizzle a bit of olive oil over the pork to help the spice mix adhere.
  3. In a Dutch oven, brown each side of the pork.
  4. Add the white onions, jalapeños, fresh garlic, orange juice, and lime juice.
  5. Cook over very low heat for 7 hours, basting the meat regularly with the cooking juices.
  6. If the cooking juices reduce too much, add a glass of water.
  7. Shred the meat by hand or with forks.
  8. Blend the remaining vegetables with some of the cooking juices.
  9. Mix the meat and sauce in the Dutch oven (if the sauce is too thick, add a bit of water) and simmer over low heat until ready to serve.

Pickled Red Onions:

  1. Slice a red onion.
  2. In a saucepan, boil the apple cider vinegar, red wine vinegar, sugar, and pepper for 1 minute.
  3. Pour the mixture over the red onions in a jar, add the dried chili.
  4. Seal the jar and let it sit for a few hours.

  1. Dip a tortilla lightly into the cooking juices from the Dutch oven.
  2. Cook the tortilla for 1 minute on each side.
  3. Fill it with meat, cheeses, pickled onions, fresh cilantro, and finely sliced shallots.
  4. Let the cheese melt, add a drizzle of lime juice, and enjoy!
These tacos should be delicious! Bon appétit!
